Doctored Cake Mix

I don’t know what my problem is, but everytime I try to make a cake from scratch, I end up with something that either crumbles to pieces when it’s cut, or something that could double as a doorstop.

My mom introduced me to the idea of doctoring cake mixes to make them more dense and flavorful. I’ve tried a number of different methods, and the method below yields a moist cake that is dense enough to form a good base for decorating. It’s also pretty rich, and in my opinion, tastes better than the bakery! Continue reading

Soft Sugar Cookies

At cast party after our middle school production of The Hysterical History of the Trojan War (best play ever!), several of the students got excited when we brought out the bakery sugar cookies. You know the kind – they’re soft, have a dollop of icing on the top, and then have some kind of sprinkles. One of our boys picked up his cookie and announced “You either like these, or you’re wrong!” Apparently, I’m wrong.

This incident sent me on a search for a good homemade recipe that I could bring the next year. I found one for Softbatch Funfetti Sugar Cookies on Averie Cooks (great blog!). They have good taste, are quite simple, and come out soft every time. I left out the sprinkles and added some buttercream on top so they look more like the bakery ones. The kids loved them!

Chocolate Peanut Butter Brownies

My brother gave me a super awesome cookbook this year for Christmas. I anticipate the 100 Best Holiday Cookies will be just the thing to help me lose this baby weight… or not. I’m a real sucker for cookies and brownies…

While flipping through the book, the Chewy Peanut Butter Brownies caught my eye. They’re a little more labor intensive than most of my recipes, but the result is worth it. The two-toned look is quite fancy, and what better combination is there than peanut butter and chocolate?

Years ago, my best friend’s mother would make the most delicious muffins for breakfast when we had sleep overs. My mother got the recipe from her, and then passed it on to me. These muffins are a hit at every party I have ever been to and with just about every roommate I’ve ever had. My little brother’s high school swim team dubbed these “crack muffins” and asked for them at every meet.
