Years ago, my best friend’s mother would make the most delicious muffins for breakfast when we had sleep overs. My mother got the recipe from her, and then passed it on to me. These muffins are a hit at every party I have ever been to and with just about every roommate I’ve ever had. My little brother’s high school swim team dubbed these “crack muffins” and asked for them at every meet.

Homemade Applesauce

Several years ago, I spent a semester working abroad in Recogne, Belgium. My host family belonged to the nobility, so I got to live in a château (true story). Adjacent to the château was the buffalo farm/ Indian museum where I worked as a waitress, cook, dishwasher, laundress, and general maid of all work (Check it out here. It’s a pretty cool place!)

Anyway, while there I met the most incredible cook. She worked for my host family and sometimes I got to help her out. She refused to give out her recipes, but I watched closely and picked up some tips. This recipe for applesauce – or as the Belgians call it, compote des pommes – is one I got from her.
